Spam A Lot
Everyone jokes about Spam, but in Hawai‘i it is still a staple used in any number of local dishes having been introduced during WWII by the US military. I tried a maki sushi at the Hilo Farmers Market made with sushi rice and nori seaweed wrapped around a slice of Spam, and I have to be honest – it was very good. But we were quite surprised at the number of varieties available here. Same ol’ same ol’ just don’t cut it in Hawai‘i.
